Greek Salad

Greek salad served in homemade pita pockets is one of my favorite meals. This recipe is good all year round, but especially in summertime, when tomatoes, cucumbers, and bell peppers are in season and on sale.

Greek Salad

3 tablespoons extra-virgin olive oil

1 tablespoon red wine vinegar

1 1/4 cups chopped tomatoes

1 cup diced seeded peeled cucumber

1 cup chopped red bell pepper

2/3 cup chopped red onion

1/2 cup chopped radishes

1/2 cup chopped fresh Italian parsley (or cilantro)

1 cup crumbled feta cheese (I leave this out because it’s expensive and cheese isn’t very healthy, anyway. But it is delicious!)

Whisk olive oil and red wine vinegar in large bowl. Season dressing with salt and pepper. Mix tomatoes, cucumber, bell pepper, red onion, radishes, parsley and dressing. Stir in feta cheese, if using.
