Sweet Potato Black Bean Spinach Quesadillas (sin queso)

You know those days when it’s close to dinner time, and you realize you have NO plan of what to make? You scan the kitchen for key ingredients that might spark your imagination of what you could possibly concoct. You see:

Sweet potatoes

whole-wheat or corn tortillas

Black Beans

Spinach

What could you make with those things? Quick quesadillas. Or these tacos, that I highly recommend.

Here’s my version:

  1. Bake sweet potato in microwave (takes 4-5 minutes).
  2. Mash up baked sweet potato in a bowl. Sprinkle in some salt, pepper, cumin, and chili powder.
  3. Heat a tortilla on medium heat in a skillet. Spread some of your mashed sweet potato on one half. Sprinkle with black beans, shredded cheese (if desired), and a lay on a few fresh spinach leaves.
  4. Fold over the other half of the tortilla. Flip and cook until both sides are golden brown.
